Title: R&D Pastry Chef Classification: Exempt Reports To: Assistant Director Job Description Position Summary As the Research and Development Pastry Chef, you will play an integral role in developing new menu recipe concepts and reworking existing Vallarta Supermarkets recipes through a fusion of pastry arts and food science. Leading the development, implementation and execution of pastry enhancement and redesign, with solutions to flavor and quality issues. Focus on developing differentiated and innovative products that are commercially viable for Vallarta Supermarkets. General Duties and Responsibilities • Use pastry skills to develop and renovate commercially viable concepts for Vallarta Stores • Cost out products for the Vallarta Supermarkets Locations effectively and accurately • Directs the development of all baked goods in the appropriate volume according to the volume and forecasts budgeted • Works with Supervisors to incorporate market innovation approaches to enhance Vallarta's brands, based on pastries and scientific skills and knowledge • Works with Supervisors to identify and analyze category team development requirements • Develops, executes, and initiates pastry development with vendors, Supervisors and Category teams • Creates and develops pastries and new menu development • Works with Supervisors to bring ideas and concepts to life • Manage pastry development projects in cooperation with marketing, operations, quality assurance and purchasing departments • Verify GMP’s and safety standards are maintained at all times • Constantly assess and monitor competition, trends and vendor ideas for the creation of compelling menu concepts and platforms • Maintains an ongoing research and development agenda to ensure that any bakery trends and or new products are considered and brought to the attention of the baking team • Creates innovative baking solutions to create a competitive advantage with a focus on renovation • Continuously seeks opportunities, in conjunction with suppliers, managers and category managers, to promote renovation, reduce overall costs and improve product quality (as appropriate) in the assigned categories without sacrificing private brand equity through the use of baking techniques • Promotes financial results by providing commercially viable product development options that are different from other products on the market or that are equally preferred to national brands but with higher margins • Responsible for understanding pastry trends and delivering new and innovative products that meet customer needs within the categories assigned • Build pastry recipes while ensuring that they are followed precisely • Gathering, analyzing and interpreting market data and consumer research to identify emerging trends and consumer needs and/or behaviors that provide insights into product innovation, renovation and differentiation; focusing on functional ingredients, trade and consumer media, restaurants, food services and consumer shows / events • In conjunction with supervisors keeps categories informed regarding baking aspects of industry and trends • Develops and maintains strong internal and external partnerships • Identify unique product attributes and benefits for the differentiation of brands related to seasonal products, platforms, key business shifts and new product concepts • Will participate in tasting, analyzing and revising food concepts • Instruct and teach proper food handling, production, storage, service, and execution • Promoting our company values of mutual respect, working smart, reliable, and effective communication Knowledge and Skills • Pastry product development; with minimum of 3 years in a cross-functional (formula, package and process) role • Success in product innovation and new product development and commercialization • Ability to critically evaluate multiple aspects of baking products • Must have a good palate and be able to taste a wide variety of foods • Creativity, Pastry aptitude and a passion for baking and dedication to producing exceptional pastries consistently • Expertise in pastry trends and the ability to identify and define key product quality and sensory attributes • Adept in formula development and bakers’ percentages for breads and yeasted pastry • Solid understanding of consumer food products brand management in bakery • Understanding of the private label retail food business environment and metrics • Influence/communicate cross functionally • Exudes a high degree of credibility and the ability to work with and through multiple levels of management including ownership • Highly functioning knowledge of recipe development, including yielding, costing, and nutrition values • Presentation skills • Strong analytical & problem-solving skills • Strong oral and written communication skills • Ability to analyze, interpret and take appropriate action on information • Customer focus Initiative Required Education and Experience • Culinary Degree or equal work experience and equivalent combination of education and related work experience • Culinary experience with baking and pastries • Significant experience with product improvements and product lifecycle management • Practical Pastry, Bakery experience • Experience operating bakery equipment, such as, mixers, sheeters, ovens, conical rounders, roll make up equipment, automated dividers, batch freezers and proof boxes • Retail Bakery experience a plus • 3+ years of related experience Physical Demands • May also have to do some light lifting of supplies and materials from time to time; Must lift to 60lbs by always utilizing “buddy-system” or tools to lift and carry load. • Ability to travel (may be up to 30%) • Work in a location with changing temperatures ambience/cold/hot, as needed Position Type/Expected Hours of Work This is an exempt level position; schedule would be based on business necessity.
