Description:

The Prep Kitchen produces all bread for Chef Daniel Boulud’s seven NYC properties. The Sous Chef Boulanger will assist with the management and supervision of all bread bakers and the production of bread for all seven of Daniel Boulud’s NYC properties.

Requirements:

Assist in the creation and testing of bread recipes for production Assist in creating production and staff schedules Assist in hiring and training of bakers, evaluating performance daily

Reports to: Chef Boulanger Competencies & Qualifications: Strong experience with artisan baking and preferred experience in a fine-dining and/or French restaurant Strong communication and organizational skills Ability to constructively train and develop staff skills Ability to manage multiple priorities and deadlines in a fast-paced, high-volume environment Professional training in baking and pastry arts, with focus on bread preferred
