Description:

The Production Manager is responsible for managing the culinary operations and production for the prepared meals area, in our Central Production Unit, a 7 day a week operation, commissary facility. Work is performed according to specific state, federal and Snap Kitchen policies and procedures regarding producing and packaging food according to standardized recipes and procedures. This is including but not limited to supervising and training, oversee 3-4 supervisors and approximately 100 employees in various work groups. Key Accountabilities • Manage all aspects of daily operation in food safety, quality control, preparation, production as well as parts of assembly and packaging. • Work closely with in-house R&D team during product and recipe development and support new product launches. • Partner with Human Resources during mentoring and disciplinary action for hourly staff and direct reports, as well as during the hiring, training, scheduling of employees. • Oversee the operation of the various kitchen equipment and coordination of trouble shooting equipment failures. • Has ownership of quality control, productivity, workflow, cooking logs and process improvements. • Perform all duties in accordance with Human Resources while adhering to company practices, safety policies and procedures (i.e. ACCP, GMP and SSOP’s). • Review performance data, goal achievement and implement appropriate actions and projects. • Reports all issues that occur daily to the appropriate manager in a timely manner. • Maintain clean, safe and organized work environment.

Requirements:

• A working background in large restaurant, hotel, culinary production or catering. • Good understanding of Lean Principles, six sigma is a plus. • Working knowledge of HACCP and GMP’s. • USDA/FDA food manufacturing experience. • Demonstrated follow through, accuracy in tasks and objectives. • Ability to excel in a diverse work force, fast paced environment knowledge. • Food Manufacturing Certificate or equivalent a plus. • Eight to ten (8-10) years of food production. • Three plus (3+) Supervisory or Managing capacity required. • English required / bilingual preferred (English and Spanish).
