The Glass Knife is one of Central Florida’s most popular and exciting culinary destinations. We are a high-quality, scratch environment that is regularly awarded Orlando’s - Reader’s Choice and Critic’s Choice as “Best Independent Bakery” and “Best Desserts”. Our Pastry Cook role is an integral part our back-of-house team, where you will prepare a variety of desserts, pastries and other sweet delicacies. This position is for someone who is well-versed in culinary arts, enjoys baking high-quality treats and thrives on being part of a fast-paced team. We require a candidate who is 100% reliable, responsible and dedicated. DUTIES & RESPONSIBILITIES: • Prepare extraordinary bakery menu items according to set recipes and specifications which will delight our Guests with their taste and unique presentation • Prepare a wide variety of goods such as cakes, cookies, muffins, danishes, bread etc. following traditional and modern recipes • Decorate pastries using different icings, toppings etc. to ensure the presentation will be beautiful and exciting • Assist with team member training and product awareness • Set up workstations with all needed ingredients and cooking/baking equipment • Assist executive chef and chef de cuisine in preparing items for Guests with special dietary needs • Keep a sanitized and orderly environment in the kitchen; Follow sanitation policies at all times • Ensure all food and other items are stored properly • Check quality of ingredients and monitoring of stock

Requirements:

QUALIFICATIONS & REQUIRED EXPERIENCE: • Minimum 2 years experience in a high volume bakery/culinary environment (pastry-specific experience is recommended) • Proven knowledge of pastry techniques & tools, scaling, proofing, decorating and finishing measurements as well, ingredients, equipment and small wares required for a bakery setting • Proven knowledge of HACCP (Hazard Analysis & Critical Control Points) as well as proper food handling techniques/temperatures • Ability to read safety procedures, and operating guidelines & instructions in English • Ability to walk and stand for long durations • Ability to safely lift up to 25 pounds • Ability to work scheduled hours, including weekdays, weekends, and holidays
